Day 31

Ending January on a high note, I had instant oatmeal (maple syrup flavor) with a banana for breakfast, a turkey sandwich and banana for lunch (turkey by Organic Prairie, bread by Alvarado St.), and tofu stir-fry for dinner. A Cascadian bar for snack this afternoon and a banana this evening and that's it for the day.

Day 30

Not a day to be proud of, really. Breakfast was good - same thing I made yesterday (eggs by Vital Farms today).

But then I had fish tacos (blackened tilapia) at Serranos for lunch...

...and Wendy's single w/cheese, fries and frosty for dinner.

Day 29

Made scrambled eggs for the roomie and myself this morning. A little garlic and onion sauteed in a pan, two chopped up Morningstar patties, last of the H&J Farms eggs, fresh tomato and parsley. Buttered Orowheat muffin on the side. Delicious.

I made a couple Applegate Farms hot dogs for lunch and had a side of Kettle chips.

Day 28

Standard eggwich this morning.

Joined a colleague at Smokey Moe's BBQ for lunch. I had brisket, sausage and pork loin in addition to potato salad and cole slaw (two pieces of white bread not pictured). It's delicious but probably factory farmed meat. Unfortunately that's just the standard assumption I have to make unless they advertise otherwise.

Leftover meatloaf, rice and peas for dinner.

Day 27

I was running late today so I picked up an egg & turkey sausage taco at work for breakfast. I opened it up for the picture because a rolled up taco is boring looking, but I don't think I did it (or you) any favors.

I brought some leftover spaghetti and sauce for lunch and had a Cascadian granola bar just after.

I was feeling lazy and unimaginative for dinner so I ordered chinese food. My weakness for General Tso's chicken is second only to my weakness for KFC or other fast-food fried chicken. Sorry, chickens. :(

Day 26

I had chocolate chip instant oatmeal with a banana this morning, however it looked very similar to the apples & cinnamon oatmeal with banana that I had yesterday, so here's yesterday's picture again.

I brought leftover meatloaf, rice and peas for lunch. It would've tasted better than it looks if I had heated it up, but I was lazy so that's about how it tasted. I also had a banana and a couple clementines. In fact I've gone through a small crate of clementines this week so it's a good bet I haven't mentioned every one I've eaten.

After lunch I picked up a mini turkey sandwich from the cafeteria for a snack.

I made whole wheat spaghetti with a simple sauce for dinner. I bought these canned stewed organic tomatoes with basil and oregano from Costco last time I went there. I didn't notice that organic cane sugar/syrup was prominently featured in the ingredients list; it made for a sauce that was almost too sweet.

On my way home from class I picked up a sundae from McDonald's.

Day 25

I'll do better next month, I promise!

Breakfast was a standard eggwich today.

Lunch was Chick-fil-A. Aside from the fact that I love their chicken sandwiches I hate the fact that it's so unhealthy and they use factory farmed chicken. However a colleague is in town who loves to eat there and I am very weak. In fact I completely blame the cows on the billboards. Only one chicken sandwich is pictured but don't think for a minute that I didn't get another one. Because I did. That's also a giant strawberry shake with whipped cream on top.

I made chicken stir-fry on brown rice for dinner - chicken from Buddy's.

Day 24

I had a simple breakfast of Apples & Cinnamon instant oatmeal with a banana in it.

I bought a full-size crunchy peanut butter Clif bar for a snack.

Indian buffet for lunch. I love Indian food even though I couldn't tell you the names of most of the things on these plates (yes I went up for seconds). Tandoori chicken, saag and naan are a few of my favorite things in life. I usually get a mango lassi too (a beverage made of 1/2 mango pulp and 1/2 yogurt) but I didn't today.

For dinner I had some of the chili I made this weekend.

Day 23

My roommate was in a cooking mood this morning so he made pancakes from scratch. They were the perfect consistency but we were both disappointed to discover that we don't have any syrup.

Yes either one of us could've run out and bought some, but we went the lazy route and smeared them with Mediterranean Organics Wild Berry preserves (not pictured).

For lunch I had a grilled cheese on magical bread, Kettle chips and Amy's split pea soup.

For dinner a salad and veggie pizza from Sarpino's. (Don't be fooled, I had four pieces of pizza).

Throughout the day I had a few clementines and a Julie's Organic fudge bar.

Day 22

I went grocery shopping in the morning so I got off to a late start in the eating department. There was a 10% sale on everything at the co-op so I bought 3 lbs. of beef and 8 boneless/skinless chicken breasts. I made meatloaf and chili with some of the beef, and put the rest in the freezer in patty form. I put half the chicken breasts in the freezer and sliced the other half into strips and marinated them overnight in soy sauce, etc. Now I have pre-marinated chicken strips in the freezer for future stir-frys.

I had falafel with hummus from Tom's Tabooley for brunch,

Pb&j on magical bread after that,

...and meatloaf (beef from Niman's Ranch, recipe from Joy of Cooking) for dinner.

Throughout the day I had a few clementines and a Julie's Organic fudge bar.

Day 21

Today's nickname will be Forgetful Friday. I had Kirkland Signature instant oatmeal for breakfast (1 packet apples and cinnamon + a packet of regular) and forgot to take a picture of it, then I had some watery vegetable soup and a salad at work and forgot to take a picture of that. I took pictures of the sushi my roommate and I had for dinner (@ Sushi Nini on Louis Henna) but it was really dark there so they didn't come out very well. So... I also had a mini Clif bar and a Julie's Organic fudge bar. Incidentally I had a bowl of Kettle chips too, but I can't remember if that was today or yesterday.

Day 20

I made a magical egg sandwich for breakfast. At least it should have been magical, given that it was an egg, Morningstar patty and slice of Horizon cheese on bread that cost SEVEN FIFTY A LOAF. Now don't get me wrong, it's delicious, wholesome, locally made bread from Great Harvest Bread Co. I'm just saying if one of the nine grains used to make it wasn't genuine gold flakes then it's not worth $7.50 to me.

I was too lazy to shop last weekend so I asked my roommate to pick some things up during the week. I suggested he get a local alternative to the Alvarado bread because frozen bread imported from the west coast isn't what I'd call sustainable. Looks like I'll be starting to make my own bread here pretty soon.  So anyway without further ado, here's what a rich person's eggwich looks like:

For lunch I had pho (pronounced 'fuh') with brisket from Pho Viet on Louis Henna. Pho is a Vietnamese soup made with rice vermicelli and various meats or seafood. I chose brisket today on the theory that factory farmed beef is a lesser evil than factory farmed chicken. Add some fresh basil, bean sprouts, hoisin and chili sauce and it's delicious. I wish I knew where I could find it with sustainable meat or seafood but as I've mentioned before I don't know of any Asian restaurants that fit that bill.

For dinner I had the leftover linguine with tomato sauce from the other night.

This is the same photo I used the other night and although I didn't eat the salad with dinner I did eat an identical salad as a snack later. I also had a small bowl of red lentil soup and a mini Clif bar.

I also had one of a new brand of fudge bars from Julie's Organic Ice Cream. They are only 100 calories like the HC fudge bars but arguably better tasting (and of course organic).

Day 19

My manager has been getting more requests for chicks than eggs, so she's in the breeding business for the time being. So my eggs this morning were from H&J Ranch. I couldn't find a web presence for them so have a photo of the carton. It was just two eggs overeasy with toast, so have a  recycled photo as well.

For lunch I joined my team at Olive Garden to celebrate the upcoming birth of my co-worker's daughter. I had several bowls of salad and about four breadsticks in addition to the lasagna and cake. Go diet, yay.
I made honey-mustard chicken, mashed potatoes and broccoli for dinner. The chicken was from Buddy's, butter from Central Market Organics and Milk from Way Back When Dairy. The recipe for the chicken was very simple: Sprinkle the breasts with s&p, top with half of a mixture of 1/2 cup honey, 1/2 cup mustard, 1 tsp dried basil, 1 tsp dried parsley, 1/2 tsp paprika. Bake @350 for 30 minutes, flip and coat the other side, bake another 10-15 minutes, voila. Thing is the recipe calls for 6 chicken breasts and I was only making two, so I quartered the honey/mustard and halved the spices. I probably should've quartered the spices too. Still, it wasn't awful. The broccoli was steamed then sauteed in evoo and sprinkled with crushed red pepper.

Naturally I ended the evening with the last two Healthy Choice fudge bars.

Day 18

Breakfast was the same eggwich as yesterday so I'm borrowing that picture.

I had a mini Clif bar as a morning snack.

We had a team lunch at Chuy's today and I had the house special: chicken enchiladas on blue corn tortillas with tomatilla sauce, rice and refried beans. Yes I feel guilt for the cost, excessive calories and most likely factory farmed chicken therein but it tastes so so good.

For dinner I had linguini tossed with a simple tomato sauce (garlic, tomatoes, carrots, and thyme) and a simple salad (romaine and cuke) with Peppercorn Ranch dressing.

I had two Healthy Choice fudge bars after dinner; only two more left!
